A Breakfast Sandwich That Can Be Shared!
Sometimes I see something interesting at a market and I give it a try. I purchased some Greek Koulóuria Bread at the Mediterranean Market in Las Vegas, because this bread had an interesting shape. Koulóuria is a large ring shaped bread loaf that is coated with sesame seed.
Koulóuria is made with a yeast leavened dough. The texture of ring bread is much softer than a French baguette and the dough is not enriched with milk. Soft bread like Koulóuria is nice for breakfast!
The ring shape of Koulóuria creates an interesting breakfast sandwich shape. Upon first glance, this sandwich looks like a bagel breakfast sandwich, but Koulóuria is much bigger. The texture of Koulóuria is much lighter than a heavy dense bagel.
Lebanese Village Cheese is one of the first documented cheese styles created in history. Village Cheese is a nice for today's recipe because the ancient Greeks were among the first to perfect yeast leavened breads.
Lebanese Galilee Village Cheese is like a rustic fresh mozzarella cheese. Like many kinds of fresh cheese that have a low fat content, Village Cheese will not melt. Village Cheese will only soften when heated.
Egg, Pepper, Smoked Bacon and Lebanese Village Cheese Koulóuria Sandwich:
This recipe yields 1 Koulóuria Bread Sandwich that can be shared by 2 or 3 guests.
Step 1: Select a Greek Koulóuria (sesame ring bread) that is about 10" wide.
Cut the ring bread in half horizontally.
Heat a seasoned cast iron griddle over medium/medium low heat.
Brush the bread with melted unsalted butter.
Grill the ring bread till it is toasted.
Keep the toasted ring bread warm on a stove top.
Step 2: Heat a non-stick sauté pan over medium/medium low heat.
Add 1 1/2 strips of smoked bacon that is coarsely chopped.
Sauté till the bacon almost becomes crisp.
Step 3: Add 1/3 cup of thin green bell pepper strips.
Sauté the peppers in the smoked bacon grease, till they start to become tender.
Step 4: Drain some of the excess grease out of the pan.
Reduce the temperature to medium low heat.
Add 3 whisked large eggs.
Add 1/3 cup of small chopped Lebanese Village Cheese.
Add 1 pinch of sea salt and black pepper.
Step 5: Use a rubber spatula to scramble the ingredients together.
*Because the Lebanese village cheese is a fresh low fat cheese, it will only soften and it will not melt!
Scramble the mixture till the eggs are fully cooked.
Step 6: Remove the pan from the heat.
Place the bottom half of the grilled ring bread on a serving plate.
Use a spoon to place the cooked egg mixture on the ring bread.
Place top half of the ring bread on the sandwich.
Garnish with cilantro sprigs.
A fancy breakfast sandwich definitely is one of life's simple pleasures!
